Tuna Bean Salad

A tasty mixed bean and tuna salad that is quick and easy to make. Perfect for summer picnics or as a side dish at barbecues.


2 tins of either (Kidney Beans, Broad beans, Butter beans, Cannellini beans or Mixed beans)
1 tin Baby Carrots
1 tin Sweetcorn
1 tin Tuna steak or chunks
1 red bell pepper
1 red onion
Chopped flat leaf parsley
2 tablespoons Olive Oil
1 tablespoon wholegrain mustard
1 tablespoon Apple Cider Vinegar
Salt and Pepper to taste


Step 1

Open tins of beans, baby carrots and sweetcorn. Rinse the contents in water and drain. Empty all into a large bowl and stir well.

Step 2

Open tin of tuna, add to the beans and stir.

Step 3

Dice the red pepper and onion finely and add to the bean/tuna mixture. Add chopped parsley and stir.

Step 4

Make a dressing with the olive oil, apple cider vinegar and mustard. Add to the bean and tuna mixture and stir well. Season to taste.
