Sweet BBQ Salmon with Honeyed Pepper and Pancetta

A fantastic light, summery BBQ recipe that’s not so difficult and great to eat in the sunshine outside with a green salad and a crisp glass of Sauvignon Blanc.


2 red peppers
2 salmon fillets with the skin on
4-6 slices of smoked pancetta
a few glugs of runny honey


Step 1

Blacken your peppers over a BBQ flame or grill till very black.

Step 2

Then put peppers in a plastic sealed bag and tie up for a few minutes.

Step 3

Pan fry or grill the pancetta for a couple of minutes.

Step 4

Peel skin off blackened peppers and then slice them into the same shape as the salmon fillets.

Step 5

Brush salmon fillets with honey and then place the pepper on top.

Step 6

Chop pancetta into fine bits and then brush more honey onto the pepper and sprinkle the pancetta on top.

Step 7

Place on BBQ for 15 minutes, or grill it if you dont have BBQ. Serve this thing of beauty straight away and then revel in the attention you receive for being such a clever cheffy girl!!!
