Summer Fruit Pudding

My recipe entry is an easy Summer Fruit Pudding, so simple the kids can help make it. We actually had this yesterday at a family BBQ and it was popular with everyone from Great Grandad to Erin!


4oz Sugar

2oz water

20oz Frozen or fresh summer fruits I used raspberries and strawberries.

6 slices of slighty stale bread.

Cream to serve.


Step 1

Cut the crusts off the bread 2. Line a two pint bowl with the stale bread, overlapping the slices so no gaps remain. 3 Place the fruit, sugar and water into a saucepan and allow to heat for 5mins, but do not allow it to boil. . Drain the fruit – keeping the liquid. 5. Poor the fruit into the breaded dish, push down gently with a spoon. Pour over half the juice. 6. Place a plate on top of the dish and a tin to weigh it down. Leave in fridge for 24 hours or overnight. 7. Turn out the pudding onto a pretty serving plate and pour over remaining juice. 8. Additional decoration can be carried out, maybe pile some fresh berries on top. Serve with extra thick cream.
