Rainbow Salad

A ridiculously simple yet delicious, tangy, flavoursome salad with a bit of bite!


1 Romaine lettuce
1/3 red cabbage
2 medium tomatoes (on the vine)
1 small onion
2 medium carrots
1/4 cucumber
1 small lemon
75ml extra virgin olive oil
A splash of balsamic vinegar


Step 1

Finely chop the red cabbage, onion, and tomatoes into 5mm chunks Add to salad bowl Peel the cucumber and chop into 5mm chunks Add to salad bowl Slice the Romaine lettuce into 10mm strips Add to salad bowl Peel the carrots and grate into the salad bowl Mix the salad until all rainbow colours have been completely mixed Squeeze in the juice of the lemon Add the extra virgin olive oil Splash on the balsamic vinegar Mix again until all salad is coated with juice and oil. Serve in small salad bowls with some hot crusty bread. The juice at the bottom of the bowl (the combination of lemon juice, tomato juice, olive oil and balsamic) is just delicious to mop up with the bread.
