Ham and 2 Cheese Basil Tartlets ( pinic treats)

These delicious tartlets filled with ham, goat cheese and cheddar cheese and the fragrant basil. It is easy to pack and ideal for a holiday picnic outing.


100g British roast ham (finely diced)
60g goat’s cheese
60g matured cheddar cheese (grated)
A handful basil leaves (roughly chopped)
4-5 spring onions (sliced)
1 teaspoon cooking oil
75ml milk
2 tablespoon cream
2large free range egg (beaten)
pepper for seasoning

For the pastry case:
250g plain flour
60g lard
60g margarine
1 pinch of salt


Step 1

1.Put flour, lard and margarine in a food processor and blitz until the mixture resemble fine breadcrumbs. Add in cold water till the mixture form a soft dough. Cover and leave the dough in the fridge for 10 minutes. 2.Beat the egg, milk and cream together in a large bowl. Add in the diced ham and the crumbled goat’s cheese. Add a dash of pepper. 3.Heat the oil in a frying pan. Soften the onions and wilt the basil. Leave to cool 4.Roll out the pastry, line four 10cm loose base fluted tartlet tins. Divide the herbs between the 8 pastry cases. Add in the egg and ham mixture. Sprinkle with grated cheddar cheese. 5.Bake in a middle of the oven 190c/375F/ Gas 5 for 20 minutes until the top is golden brown. Remove from the oven and leave to cool. 6.Serve warm with freshly dressed green leaves salad and pickled cucumber relish.
