Frittata feast is one of my favourite alfresco recipes. It has an easy fresh taste with nutritious, simple, store cupboard ingrediants. Really nice to eat outsdie on a sunny day.


2 big tablespoons olive oil
I very large red chopped onion
200g frozen vegetables of your choice,
6 eggs
Salt and freshly ground black pepper.


Step 1

Boiling the vegetables for 10mins. Heat the oil in a large frying pan and cook the onion for 5 minutes , drain the vegetables & and add them to the pan with the onion. Cook for 3 more mins. Beat together eggs, season, pour into the frying pan and cook over a low heat for 10 minutes. Place under a hot grill for 1 minutes to finish the cooking. Dish up.
