Prawn Macaroni Salad

A cold prawn pasta salad which can be eaten as a main meal with fresh crusty bread or as part of a bbq as a side dish. Keeps for 24 hours in the fridge. Menu serves 4 as a main dish.


10 heaped tablespoons of salad cream
2 teaspoons of olive oil
2 sticks of celery
4 hard boiled eggs
400 g frozen or fresh cooked prawns
1 small tub of single cream (can be subsituted with 4 tablespoons of mayonaise and a dash of milk)
250 g macaroni (cooked and cooled)
4 tomatoes
1 large white onion


Step 1

Cook macaroni and leave to cool Boil eggs and leave to cool Mix together the salad cream, oil and cream until smooth Add the cooled macaroni and stir until completely covered Thinly slice the celery and onion and add to the pasta mix Chop the tomatoes and eggs and add to the pasta mix Add the prawns and stir Serve immediately or refridgerate until ready
